Chilli chocolate tart
Ingredients
Pastry:
2 tsp Cocoa powder
7 tsp Icing sugar
140g Plain flour
75ml Full fat milk
50g Unsalted butter
Filling:
1 tsp Chilli flakes
150ml Full fat milk
400g Dark chocolate
250g Double cream
Cornstarch as required
Instructions
1. Rub flour and butter together.
2. Sift in cocao powder, icing sugar, and finally add the milk.
3. Roll the dough flat and gently press into the base and up the sides of the tart tin.
4. Heat oven to 190°C and blind bake for 15 minutes. After 15 minutes remove foil and baking beans, then glaze with milk. Bake again for 10 minutes (not blind).
5. Add cream, milk, chilli flakes to a medium saucepan, and bring to boil. Leave to infuse for 1 hour.
6. After 1 hour, strain the cream, and bring back to a boil.
7. Once boiled, pour cream over the chooclate to form a ganache. Once combined slowly add cornstartch to reach desired consistency.
8. Reduce oven temp to 150°C and bake for 15-20 minutes.
9. Dust with cocoa powder and/or chilli powder before serving.
